Flash Infusion method recipe for Hot Chicken

Flash Infusion is a method for applying a spice flavoring following the frying of a breaded food product.

Measure one level teaspoon or approximately 5 grams of Music City Hot Chicken Shake and place into a coffee cup or other small container that will withstand grease at frying temperatures.

Fry chicken using the oil and breading of your choice. When done remove the chicken to a pan with drain rack.

Using a soup ladle reach into your fry pot and obtain about 2 ounces of the hot oil. Pour this over the spice mix.

Stir these briefly and quickly pour the oil over your chicken which usually leaves most of the spice dregs in the cup.

If you are doing several pieces there will be an accumulation of infused oil which can be recovered, reheated in a microwave and used to flavor additional chicken. Accomplishing this using high temperature infused grease leaves you with the crispy and none greasy chicken that I prefer.
